Rosewood 2016 Süssreserve Riesling


The ‘süssreserve’ method is an alternative way to create an off-dry Riesling that is commonly used in Germany. Instead of adding sucrose or arresting the fermentation, a portion of the Riesling juice was kept unfermented until the rest of the cuvée was finished fermentation. The juice was then blended back to provide natural grape sugar and acidity. The grapes achieved good levels of flavour and phenolic ripeness but still retained good natural acidity. Stainless steel fermentation was used to preserve freshness and bright fruit flavours. The wine was allowed to age on fine lees for a further 6 months for stability and added a complexity of texture. The wine was filtered and bottled on March 21, 2017.

Süssreserve refers to the winemaking technique of blending unfermented juice back into the fermented wine giving our Riesling just a hint of sweetness. On the nose, vibrant honeysuckle and apple blossom, followed by, white peach, ripe honeydew melon, passion fruit, and grapefruit. The palate mirroring the bright floral and ripe fruit aromas, showing light notes of minerality leading to a crisp mouth-watering finish. Serve with fresh grilled white fish and seafood, green salads, chèvre, Thai & curry dishes.
