The Unfiltered Pinot Noir returns. It is fermented using non-selective wild yeast. Extraction took place over 40 days on skins in the tank before gentle pressing and moved to neutral French oak barrels. It was aged for 15 months on fine lees in neutral French oak before being bottled unfined and unfiltered. Light and juicy, this Pinot is reminded of summertime hikes and foraging for wild berries.
