100% Gamay Noir; after an extremely long and slow sorting completed by at hand throughout several nights (hence “Night Moves”; Seger is ok too) of the fruit, the wine was wild fermented in stainless steel before being moved to 100% neutral French oak barrels for 11 months of ageing.
Bottled unfined & unfiltered @ zero parts per million of free sulphur.
